Sausage stuffing is my family’s favorite stuffing. We only make it for Thanksgiving and Christmas. When we used to make it we never fried up the Sausage first but since all the hoopla about Pork being done and you shouldn’t stuff the turkey and all that, we started frying the sausage almost all the way before we make it. You can stuff the turkey, bake it in a separate dish in the oven or I like to do it the easy way, put it in the crock pot and let it cook all day. The house smells wonderful between the turkey and the stuffing!
2 loaves of day old bread
2 Sausage Rolls ( 1 per loaf) I use Jimmy Dean Original and 1 other either hot or sage
4 eggs – 2 eggs per loaf
2 tsp. sage
salt and pepper
2 chopped onions
2 small green peppers (I use frozen onion and peppers)
2 cups celery
1 or 2 cans of chicken broth (I used 1 1/2 cans)
Break up bread into chunks, I usually do this the night before.
I fry up the sausage the night before so it’s cooled off. I use my big stock pot to mix everything in so I have enough room and it’s not overflowing. Then add everything else to the bread and mix. I use my hands to make sure everything is mixed up good.
Once mixed I put it in the crockpot for 6-8 hours. I kept some out to stuff the turkey with.
My husband likes it crusty so I leave it in the crock pot for the full amount of time until the Turkey is done.
