Who doesn’t love some green bean casserole on any holiday? It’s a staple at most Thanksgiving, Christmas and Easter dinner tables and it’s even better when it’s a Weight Watchers Green Bean Casserole so you can know you are staying on track with your weight loss goals!

Fresh String Bean Recipe Option
Of course if you prefer you can use fresh green beans instead of canned, which I often do because I am not a fan of mushy canned string beans and am really trying to up the amount of fresh veggies in my diet. If you decide to use fresh it will add a few minutes of prep time too.
For fresh string beans you will want to do the following:
- Use about 1/2 pound of string beans
- Wash thoroughly
- Cut the ends off the string beans
- Cut string beans in half for easier serving
- Add a bit of olive oil or coconut oil to a heated pan
- Heat string beans for about 3-4 minutes
- Add remaining items from recipe above (excluding the canned string beans of course)
- Stir together until thoroughly mixed and pour into the casserole pan
- Bake as noted above.
Serving size should be about the same as above – but you can use more or less of the string beans.

Can this be made with fresh green beans? How many people is this recipe for? If I have 2 lbs of fresh green beans, what changes do I need to make to the recipe please and thank you.
Mary Walker
I would imagine you could use fresh. Although I’m not sure how many you would need.

I agree, it’s as simple as switching low fat milk instead of heavy cream, and you can’t even taste the difference.
