Funfetti Halloween Cheesecake Recipe!
So many awesome Halloween recipes and so little time. Halloween is only a couple of weeks away but it seems like just yesterday that it was the 4th of July. I guess time flies when you’re having fun (or getting older!)
The great thing about the Funfetti Halloween Cheesecake Recipe is that you can switch up the funfetti colors for Christmas or any other holiday that you’d like. Yum!
I think you and your family will enjoy this Funfetti Halloween Cheesecake recipe as much as mine does.
INGREDIENTS:
- 1 box Funfetti cake mix, ingredients as needed for the cake mix
Cheesecake:
- 3 8oz. cream cheese, softened
- 1 cup sugar
- 3 large eggs
- 1/4 cup sour cream
- 2 tsp. vanilla extract
- 1 cup Halloween sprinkles
Whipped cream:
- 1 C heavy whipping cream
- 1/2 tsp vanilla
- 1/2 C powder sugar
- 1/2 cup Halloween sprinkles to sprinkle on top
- Piping bag fitted with a large star tip
- Spatula
DIRECTIONS:
1. Preheat oven to 350°
2. Using a 9” springform pan coat it with baking non-stick spray.
3. Set to the side
Cake:
1. Make the Funfetti cake mix according to package instructions and pour about half of the batter into prepared pan.
2. Shake the spring form pan to evenly distribute the the cake batter
3. Bake 23 to 25 minutes or until a toothpick inserted into the middle of the cake comes out clean.
4. Remove from the oven and let the cake cool for 10 minutes.
Cheesecake mixture:
1. In a large bowl add cream cheese and sugar and mix with a hand mixer until well combined.
2. Add eggs and beat until combined.
3. Now stir in the sour cream and vanilla and sprinkles.
4. Mix until combined.
5. Pour cheesecake batter on top of the cooled cake.
6. Bake 1 hour to 1 hour 10 minutes.
7. Remove pan from oven.
8. Let cool 1 hour on a wire rack, then refrigerate until totally chilled, at least 4 hours and up to overnight.
Whipped topping Directions:
1. Using a standing mixer, combine the heavy whipping cream, vanilla and powder sugar.
2. Mix on medium speed until stiff peaks form.
Decorating:
1. Pipe whipped cream on top of the cheesecake.
2. Use the angled spatula to smooth out the whipped cream.
3. Pipe on stars around the edge of the cheesecake.
4. Sprinkle the edge of the cheesecake with Halloween sprinkles.
5. Place the cheesecake back to refrigerate for 30 minutes before serving.
6. Enjoy!
