I am always on the lookout for new things to make so I can stay on track with my Weight Watchers plan.
Sadly I am very much a sweets addict so it is a challenge getting that sweet tooth fix but staying within my point allotment. This recipe has been one that I am thrilled to have tried because it meets my points – and my sweet tooth loves it! This crepe recipe is really easy – and you can try so many different variations of it!
Typically crepes are considered a bit of a fattening food – but not this Weight Watchers Crepe Recipe! I pretty much guarantee you will love the taste – without sacrificing your diet.
Crepes are really nothing but a really thin pancake filled with just about anything you want to put inside.
I like to add fresh fruit to mine since they are always no points – and I can always use more fruit in my daily intake.
Each crepe is 2 Weight Watchers Points Plus and I usually will have two at one serving. They will be fairly sweet if you use really ripe delicious fruits which will prevent the need to add any syrup.
I added a drizzle of chocolate and whipped cream to mine. The total Weight Watchers Points Plus for what you see below is 5 points. Not too bad for a sweet treat!
Ingredients
- 1/2 cup flour
- 1/4 teaspoon salt
- 1/2 teaspoon nutmeg
- 1 cup skim milk
- 2 large eggs – lightly beaten
- 2 cups fresh strawberries – sliced
- fat free whipped topping
- chocolate syrup
Remember – the ingredients noted here are for the Weight Watchers version of the recipe to stay in that 2 points range! If you are also on Weight Watchers – you can change out the fruit for some other type like blueberries or raspberries and the points should stay the same.
If you are not on Weight Watchers then have some fun! You can add Nutella, peanut butter and so much more to really make it your own.
Instructions
1. Whisk together flour, salt and nutmeg.
2. Add lightly beaten eggs and skim milk.
3. Beat eggs and add to dry mixture along with milk, lightly beat until well blended
4. Let sit for 15 minutes.
5. Spray pan with a non stick spray
6. Heat pan until a drop of water sizzles.
7. Take 1/4 cup and pour into pan.
8. Mix batter and scoop 1/4 cup into hot pan.
9. Swirl around pan to coat.
10. Once the first side is lightly browned, flip and brown the other side.
11. Add your filling
12. Fold crepe
13. Remove crepe from pan and add toppings
Weight Watchers Crepes
Wonderfully flavorful crepes that are Weight Watchers friendly.
Ingredients
- 1/2 cup flour
- 1/4 teaspoon salt
- 1/2 teaspoon nutmeg
- 1 cup skim milk
- 2 large eggs - lightly beaten
- 2 cups fresh strawberries - sliced
- fat free whipped topping
- chocolate syrup
Instructions
- Whisk together flour, salt and nutmeg.
- Add lightly beaten eggs and skim milk.
- Let stand for 15 minutes.
- Spray pan lightly with non stick spray.
- Wait until a drop of water sizzles in pan.
- Mix batter and scoop 1/4 cup into hot pan.
- Swirl around pan to coat.
- Wait a couple minutes and lift edges with spatula.
- Flip and brown other side.
- Add ingredients (fresh fruit or whatever you would like).
- Fold over, remove from heat, garnish and serve.
Notes
While I made mine with strawberries you can use any fruit in this crepe recipe. If you are not on Weight Watchers then you can do a whole lot more experimenting with so many items like Nutella, peanut butter and more.
These crepes are simple to make and delicious to eat – just remember to have fun with them and be creative!
