With the taste of bacon, onion and potatoes, the Yummy Homemade Potato Soup Recipe is perfect for the cold weather or Christmas Eve Wigilia dinner.

Coming from a Polish Roman Catholic family, we have traditions that we would do every Christmas. My grandparents came from Poland and one of those traditions is Wigilia.
Wigilia is a tradition that features a meatless dinner consisting of twelve distinct dishes in honor of the twelve disciples on Christmas Eve. We break opłatek or Christmas Wafer as known to some, which symbolizes the gift of daily bread and wishing each other blessings for the coming year. This is also where the extra place setting and empty chair originated from for the unexpected guest.

It starts off with soup which can be a few different ones including mushroom or like our recipe here – potato!
Since no one in our family liked mushrooms, my mom would make this yummy homemade Potato Soup recipe.

Ingredients
- 1 pound Yukon potatoes
- 1 tablespoon bacon grease or olive oil
- 1 Yellow Onion
- Green onion
- Salt & pepper
- 4 cups beef broth
- 1 cup water

Instructions
1. Boil potatoes in pot of water until well cooked. Poke a potato and the potato should fall apart easy – that is when they are done.
2. Drain the potatoes and leave in strainer
3. Place bacon grease in a stockpot over medium heat, add chopped onion and cook until onions become translucent. This should take about 3 minutes.
4. Add strained potatoes, beef broth and water to to stockpot and cook about 20 minutes.

5. Use a hand blender or traditional blender and blend the potato soup until smooth.
Use caution when blending hot soups because they may expand when blending!
Do NOT fill your blender to the top – fill it no more than two thirds of the way before blending. Alternatively you can let the soup cool down a bit before blending.


6. Season potato soup with salt and pepper to taste
7. Garnish with green onion as desired.
