There is just nothing better on a cold winter day – or when you are feeling under the weather than a hot steaming bowl of mommy’s homemade rotisserie chicken soup!
One thing we never have in our house is canned soup – the taste of metal does not make for a good chicken soup experience! There is just no comparison in taste and goodness of fresh homemade chicken noodle soup.
This soup is easy to make because we are using rotisserie chicken which shaves preparation time off regular chicken noodle soup recipes. The real bonus is that you can freeze the leftovers for easy reheating when you need something warm fast!

This recipe is super simple because you can use a Rotisserie Chicken which makes the whole recipe so much easier and even tastier!
I usually get my rotisserie chickens from Costco – for just $5.99 I usually have enough for a pot of soup that will last for a few meals. I also found their rotisserie chickens have a lot more meat on them then the ones I have tried at Shoprite or other local supermarkets.

Ingredients
- 4 cups of cooked chicken
- 4 cups of water
- 32 oz chicken broth
- 2 stalks of celery, chopped
- 2 cups of carrots, chopped
- 2 garlic cloves, chopped
- ¼ cup of onion, chopped
- 1 teaspoon of salt (or to taste)
- ½ teaspoon of black pepper
- ½ teaspoon of oregano
- ½ teaspoon of paprika
- 3 cups of egg noodles
- ¼ cup of parsley, chopped

Instructions
1. In a large pot over medium heat add in all of the ingredients, except for egg noodles and parsley.


2. Cook for 15 minutes.
3. Add in noodles and parsley
4. Cook until noodles and vegetables are tender.
5. Serve hot.


Rotisserie Chicken Soup Option
This recipe uses precooked rotisserie chicken because we wanted to give you a quick easy option for making an amazing soup. But we understand some may not have access to a rotisserie chicken or may just prefer to use fresh chicken.
If you decide to use regular chicken, the steps above will still apply – the only difference is that you do need to cook your chicken first.
Salt and pepper your raw chicken and then cook for 20-25 minutes over medium high heat, once the chicken is cooked then you can add in the spices and finish cooking the soup.


Make sure you have some fresh bread – preferably warmed ready for dipping!

Easy Chicken Noodle Soup
Delicious and easy homemade chicken noodle soup made with rotisserie chicken for a fast meal on those busy days.
Ingredients
- 4 cups of cooked chicken
- 4 cups of water
- 32 oz chicken broth

- 2 cups of carrots, chopped
- 2 garlic cloves, chopped
- ¼ cup of onion, chopped
- 1 teaspoon of salt (or to taste)
- ½ teaspoon of black pepper
- ½ teaspoon of oregano
- ½ teaspoon of paprika
- 3 cups of egg noodles
- ¼ cup of parsley, chopped

Notes
This recipe uses a precooked rotisserie chicken which lessens the cooking time. If you are using raw chicken, follow the same steps, but cook chicken first for 20-25 minutes over medium high heat, or until chicken is cooked, before adding in pasta and parsley. Then add in noodles and parsley, lower heat to medium low and continue cooking until pasta is done.
