Wheat Pizza Muffins Recipe

Ingredients

  • 2 whole wheat light english muffins split in half (SP - 3 per each English Muffin)
  • 1 cup of pizza sauce or more as desired (SP - 3 per half cup) You can use regular Prego spaghetti sauce if you'd like for only 2 SP.
  • 1 cup of fat free shredded mozzarella cheese or more as desired (SP - 1 per 1/2 cup)
  • 1 large tomato sliced into 8
  • ΒΌ cup of spinach roughly chopped (or more as desired)
  • Optional ingredients:
  • Pinch of dried basil pinch of dried oregano

Instructions

  1. Preheat oven to 400 degrees fahrenheit.
  2. On each slice of english muffins, add 1/4 cup of pizza sauce, layer with a tomato slice, then layer with one or teaspoons of spinach, top with a layer of 1/4 cup of cheese.
  3. If desired, sprinkle a pinch of basil and oregano to each pizza.
  4. Place pizza muffins on a non greased baking pan and put in the oven for 7 minutes, or until cheese melts.
  5. **Can be served hot or cold. Feel free to omit tomatoes or spinach and replace with other pizza toppings if desired.**
