It's almost strawberry season here in the Northeast so I'm going to be sharing a few of my family's favorite strawberry recipes like this Easy Strawberry Muffins Recipe. That's one of the great things about traveling...I get to be in strawberry season from early March until late June.

Easy Strawberry Muffins Recipe

Ingredients

  • 1/4 cup melted butter
  • 2 eggs
  • 1/2 cup buttermilk
  • 3/4 cup white sugar
  • 2 cups flour
  • 2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon lemon juice
  • 1 cup chopped strawberries

Instructions

  1. Preheat oven to 375F
  2. Line a muffin tray with muffin liners and set aside.
  3. In a small bowl, combine the flour, baking powder and salt. Stir and set aside.
  4. In a large bowl, combine the butter, eggs, buttermilk and sugar until frothy and light. Add the dry ingredients and stir until just moistened.
  5. Add in the strawberries and stir until mixed throughout.
  6. Scoop 1/4 cup portions of the strawberry muffin batter into the liners.
  7. Bake for 15-18 minutes until slightly golden and an inserted toothpick comes out clean.
