Tex Mex Egg Rolls Recipe

Ingredients

  • 1 rotisserie chicken shredded
  • 1 tsp minced green onion
  • 1/2 C corn kernals cooked
  • 1/2 C black beans
  • 2 tsp minced jalapeno
  • 1/2 tbsp minced fresh parsley
  • 1/2 tsp ground cumin
  • 1/2 tsp chili powder
  • 1/3 tsp salt
  • 1 pinch ground cayenne pepper
  • 1 C shredded Monterey Jack cheese
  • 5 flour tortillas taco size
  • 1 qt of oil for deep fryer

Avocado cream sauce ingredients:

  • 2 large ripe avocados
  • 1 C greek yogurt
  • 1 lime juiced

Instructions

  1. In a large pan, add in a bit of oil and sauté the green onion until tender
  2. Add in the chicken, corn, black beans, and jalapeno
  3. Add in the seasonings and mix until combined.
  4. Pour into a bowl and let cool
  5. Once cooled, add in the cheese and mix until combined
  6. Take a tortilla and scoop and even amount into the center, fold the ends and then roll the tortilla tightly.
  7. Add a toothpick to the middle and place into a large baking dish.
  8. Once done, place into the freezer and freeze for 4 hours.
  9. Once the 4 hours are up, turn the deep fryer onto high heat, Place two of the wraps into the fryer and fry for 10 minutes.

Avocado Cream Sauce Directions:

  1. Peel the avocado and remove the pit.
  2. Add the flesh into a food processor or blender.
  3. Add in the yogurt and lime.
  4. Puree until smooth.
  5. Enjoy!
