Preheat oven to 350°.

Setup mini ice cream cones on a cookie sheet. (I couldn't use the ice cream cone cupcake rack because these cones are too small.)

Prepare cake mix according to directions.

Fill mini ice cream cones a little of 1/2 full. (almost to 3/4 but not quite!)

Bake approximately 15 minutes but keep an eye on them because all ovens bake differently.

Remove from oven and let cool.

Separate vanilla frosting into 3 bowls leaving 1 white.

Add red food coloring to one bowl and blue food coloring to the other.

Scoop each color into a plastic baggie (or pastry bag) and snip off the tip.

Pipe onto cupcakes once cooled to make it look like ice cream. You can use a fancy tip but you really don't need to.

Repeat with chocolate frosting.

Add sprinkles and a cherry on top.

Refrigerate until ready to serve.
