Chicken Fajita Salad
Sometimes, you just want to have something a little lighter to eat, especially when it’s hot outside (I realize it’s still winter in most parts of the country, but I’m just thinking ahead). Actually, this salad is good for anytime. Plus, it’s easy to make. I like to make the Crock Pot Chicken Fajitas in big batches. I then put them in little containers, like old butter containers, and freeze them so they are usually good for at least 2 fajitas or a couple of salads.
This is also a great salad if you are doing the Fresh Express 30 day salad swap. Remember, if you don’t like something on it, just omit it or swap it for something you do like. My husband will eat the salad minus the sour cream. You can also use any kind of lettuce that you like.
- 2 oz. Chicken Fajitas
- 7 oz. Tortilla Strips
- 1/4 cup Fat Free Cheddar Cheese
- 1/4 cup Fat Free Salsa
- 1 TBS. Fat Free Sour Cream
- Cherry Tomatoes
- Fresh Express American Salad
- Layer everything and enjoy.
- I usually mix it all up so everything is coated with the salsa.
- Weight Watchers Points Plus = 5
This is just one of the many salad recipes that we will be showcasing this month. It’s pretty easy to stick to the Weight Watchers program, especially when you are swapping out something for a salad with the Fresh Express 30 Day Salad Swap.
These are the Tortilla Strips we used on the salad, but you can always crumble up regular tortilla chips if you would like. You can also add green pepper and yellow or red pepper strips if you want to for 0 added PP.
