Shrimp and Guacamole Wontons Recipe!
Summer is almost here and with it comes BBQ’s, picnics and parties besides the fact that today is National Shrimp Day. The problem with that is trying to stay on track with all the good food there always is. My remedy for that is to bring my own appetizers so that I know how many points I am using. The Weight Watchers Shrimp and Guacamole Wontons recipe is not only easy to make but keeps me on plan without going over. With only 3 smart points per serving of 2, I can even have a few more so that I’m not tempted with all the other goodies.
Ingredients
- 1 pkg. Wonton Wraps
- 24 Small to Medium Sized Shrimp, deveined and tails removed
- Guacamole, homemade or store bought
- Old Bay Seasoning
- 3 Tbsp. Butter
Directions
1. Preheat oven to 350 degrees.
2. Spray a mini muffin pan with cooking spray and press a wonton wrapper in each little cup.
3. Bake in the oven for 8-10 minutes or until golden brown.
4. In a skillet, melt the butter and add the shrimp. Sprinkle Old Bay seasoning over the shrimp.
5. Cook over medium heat for about 2-3 minutes on each side.
6. Remove from skillet and set on a paper towel.
7. Fill each wonton cup with a spoonful of guacamole, and top with a shrimp.
8. Serve immediately.
