Make these after the kids go to bed and let them think the Easter Bunny brought them straight from the garden! These adorable Carrot Patch cupcakes look they are ready to be plucked out of the ground! Chocolate cupcakes filled with orange icing and topped with an orange dollop of icing that looks like a carrot top. The edible grass poking out of the top gives an extra special and realistic touch. This is an Easter cupcake that will make everyone smile.
Hidden Carrot Cupcakes Recipe!
This recipe looks harder than it is! While we suggest making homemade cupcakes for the richest chocolatey goodness – you can also buy plain pre-made cupcakes to save some time!
Cupcake Ingredients
- 1 box chocolate cake mix
- 1 box chocolate pudding
- 1/2 cup milk
- 3 eggs
- 1/2 cup oil
- 1 cup sour cream
Icing Ingredients
- 1 can of vanilla frosting
- Orange food coloring
- Edible green easter grass
For this recipe I did use pre-made chocolate cupcakes from our local store, but the recipe above is what I use as a base for my chocolate cake based recipes for those that want to do it themselves.
Instructions
1. In a small bowl, combine the coloring and frosting and mix well.
2. Next, using a knife or a frosting tip, make a hole in the middle of the cupcakes.
3. Using a piping bag, fill the hole with frosting. Then pipe a dollop of frosting on top of the hole into a peak to look like a carrot top.
4. Stick 4 little pieces of the edible Easter grass into the carrot top.

Ingredients
Cupcake Ingredients
- 1 box chocolate cake mix
- 1 box chocolate pudding mix
- 1/2 cup milk
- 3 eggs
- 1/2 cup oil
- 1 cup sour cream
Icing Ingredients
- 1 can vanilla frosting
- Orange food coloring
- Edible green easter grass
Instructions
- Preheat oven to 350 degrees.
- Line cupcake/muffin pans with cupcake liners
- In a bowl mix cake mix, pudding, oil, milk and sour cream until well blended
- Add eggs and continue mixing until thoroughly blended
- Scoop mixture about 3.4 of the way into each cupcake liner
- Cook for 18-20 minutes
- While cupcakes are cooking, in a small bowl combine orange food coloring and vanilla frosting until desired color is achieved. Use more or less coloring to get desired orange color
- Once cupcakes have cooled use a piping bag to fill center of cupcake with small amount of frosting and pipe a dollop on top of cupcake to create the look of the carrot top
- Place edible grass in the tops of the cupcakes
