Cast Iron Skillet Shrimp and Chicken Fajitas Recipe!
Who doesn’t love Shrimp and Chicken Fajitas? This is the perfect dish for your Labor Day fiesta and your friends will love it. You can eat them just like that or roll them up in taco shells. Add some salsa and cheese and you are good to go!
Ingredients:
- 2 Chicken breast
- 1 Pound of shrimp
- Orange, Red, Green, and Yellow peppers
- Onion
- Limes
- Cilantro
- Spanish Paprika
- Salt and Pepper
- olive oil
- Cilantro
Directions:
- Season your chicken with Spanish paprika, salt and pepper on all sides.
- In cast iron skillet add 3 tbsp. of olive oil and place on your stovetop at medium heat to high heat.
- Once you start to hear the oil “pop” add your chicken cook on high for 5 minutes until the thighs look crispy then rotate and cook for another 5 minutes.
- Now reduce your heat to medium and cook on both sides for 12 minutes each to insure its completely cooked.
- Pull the chicken out and place to the side.
- Add in Shrimp and cook until fully cooked, Set aside.
- Remove the skin off your onion and chop into 1 inch slices.
- Remove the stem, seeds and slice your peppers not 1 inch rounds.
- Add your peppers and onion to the cast iron add salt and pepper to taste.
- Cook on medium heat till tender.
- Turn off your heat on your stovetop and place the chicken back in the skillet heat on medium.
- Remove the stems off your cilantro and dice into small bits.
- Add your cilantro on top of your chicken.
- Garnish with Lime wheels cut in half.
