Barbecue-Glazed Meat Loaf!
Yesterday I shared with you a Berry Crunch Parfait made with Honey Bunches of Oats. Today, we have Barbecue-Glazed Meat Loaf for you. My husband isn’t a big fan of BBQ sauce, but once he tasted the meat loaf, he was hooked. I think it was the way the house smelled for almost the entire hour it was cooking that made everyone’s mouth water with anticipation. It smelled delicious and tasted as good as it smelled. So, let’s get on with the recipe.
The Barbecue-Glazed Meat Loaf is also made with Honey Bunches of Oats and maybe that’s what gave it the extra flavor. It wasn’t my plain old boring meat loaf that I usually make. The Barbecue sauce formed a glaze on top it while it was cooking. I served it with some mashed potatoes and green beans to round out the meal.
Ingredients:
- 2 cups Honey Bunches of Oats Cereal
- 1/2 cup barbecue sauce, divided
- 2 egg whites
- 3/4 lb. extra lean ground beef
- 1 medium yellow onion, chopped (I cheated and used frozen peppers and onions :))
- 1 medium green pepper, chopped
- 1/2 cup shredded carrots
Directions:
- Preheat oven to 375°F. Mix cereal, 1/3 of the barbecue sauce and egg whites in large bowl until well blended. Add remaining ingredients; mix lightly.
- Shape into loaf; place in foil-lined baking pan. Brush with remaining barbecue sauce.
- Bake 1 hour or until cooked through.
You know the part where it says “place in foil-lined pan?” Yeah, that…you want to do that. I skipped that part and it stuck horribly to the bottom.
Tips and Suggestions:
Serving Suggestion: Serve with cooked rice and a green salad tossed with your favorite dressing.
Nutrition Bonus: You can feel great serving this nutrient-packed favorite to your family. It is rich in vitamin A from the carrots and high in iron from the enriched cereal. The green pepper provides vitamin C.
There was a little bit left over for the following day which I put on a sandwich for lunch. Some people would say “yuck, you put cereal in the meat loaf? I’m not eating that!” I say “don’t mock it unless you tried it!” It really was delicious and you wouldn’t even know that it Honey Bunches of Oats in it…unless I told you!

Ingredients
- 2 cups Honey Bunches of Oats Cereal
- 1/2 cup barbecue sauce divided
- 2 egg whites
- 3/4 lb. extra lean ground beef
- 1 medium yellow onion
- 1 medium green pepper
- 1/2 cup shredded carrots
Instructions

Preheat oven to 375.

Brush with leftover BBQ sauce.
