This Bread Bowl Soup recipe is one great way to get some great use from that turkey and even some veggies if you have those left too! Warm and comforting this is a soup that your family will want more of.
The ease of making this is in the crockpot makes this a great weekday meal. Just place everything in, let it cook during the day and when you get home at the end of a busy day you have a great meal that is ready to eat.
Ingredients
- 2 C apple juice.
- 1 can chicken stock.
- ½ C diced peeled apples.
- 1 can peas, drained and rinsed.
- 1 can sliced carrots, drained and rinsed.
- 1 can corn, drained and rinsed.
- ½ Spanish onion, diced.
- 1/ 2 jar of turkey gravy.
- 2 tsp ginger.
- salt and pepper to taste.
- 2 C cooked dark turkey, minced.
- 1 package rotini pasta.
- Pam Spray.
- Bread bowls.
Instructions
1. Spray your crock pot with Pam spray.
2. Add the apple juice and chicken stock to the crock pot.
3. Turn the crock pot on medium heat and continue to add the ingredients (except the pasta).
4. Stir the ingredients to blend the ingredients together.
5. Heat for 5 hours.
6. Add the pasta, stirring to mix well and cook for an additional hour.
7. Before serving the soup, spoon it into each bread bowl.
